It has no cream or cheese, so I don’t think it is a gratin or dauphinoise.

To get your beetroot and celeriac sliced very finely as well as quickly, use a mandolin (with the guard) or the slicing attachment of your food processor. Beetroot, well, it doesn’t mash so well (it is a bit scary to be honest), nor chip up so nicely, but it certainly gratins up a storm.
